
My mother-in-law once showed me a picture of my husband around 3 years old, blissfully gnawing on a piece of galbi, aka Korean style BBQ short ribs. The carnivore gene must be strong, because these days my sons can't get enough galbi either. …It's truly addictive: a little sweet, a little salty, with rresistible, crispy, seared edges. At home, I will prepare some rice, vegetables, and dried seaweed for the family to make lettuce wraps or seaweed rolls with cucumber or avocado slices. I love watching them wolf it down and ask for more. Living in LA, I wouldn't have to make galbi at home; you can find it in quite a few local restaurants. But it’s such a wonderful meal to have at home and so so so easy to make the perfect galbi. The marinade does all the work! As things get busy, this is my go-to contribution to friends' BBQs and birthdays. Believe me, when the summer starts winding down and you feel like you can't even look at another hamburger or hot dog, galbi will be your savior. Just pop the ribs and marinade in the fridge the night before and be prepared to bask in the glow of your hero status at the next day's cookout. Makes 6 servings INGREDIENTS 3 lbs Korean style beef short ribs *short ribs cut ½ in slices across the bones (flanken-style) 1/3 c. soy sauce 1/3 c. rice wine 1/4 c. honey 2 tbsp sesame oil 1 tbsp brown sugar 1 tsp black pepper 5 cloves garlic 1 medium onion 1-inch chunk of unpeeled ginger (no more than 1 tsp chopped) 2 ripe pears (bosc or barlett are good!) KOREAN BBQ SHORT RIBS (GALBI) 1. Soak the ribs in cold water for 20 minutes to remove blood and impurities. Then rinse and wash off any bits of bone fragments. Drain well. 2. Prepare the marinade. Add soy sauce, sesame oil, rice wine, honey, brown sugar, and black pepper to a large bowl. In a blender or food processor, purée the pears, garlic, onion, and ginger and add it to the soy mixture. Add the clean ribs to the marinade and mix well. Cover and refrigerate overnight so that the flavors seep into the ribs. 3. Bring to room temp, drain, and discard marinade.
